This coffee undergoes the Dark Honey process, one of the most labour-intensive and rewarding methods of processing coffee. Instead of washing the fruit completely away, a generous layer of the sticky, sugar-rich mucilage is intentionally left on the bean during drying. Over several weeks of slow, shade drying, these natural sugars gently ferment and infuse the coffee, creating extraordinary sweetness, body, and complexity while preserving the coffee's vibrant character.
The result is a cup that's rich, indulgent, and beautifully layered. It opens with comforting notes of freshly baked banana bread and deep jaggery sweetness, before bright citrus notes of clementine cut through the richness. As the cup cools, a delicate kiwi-like finish lingers, adding a refreshing lift that keeps every sip balanced and endlessly drinkable.
